What You’ll Need
Main Ingredients
• 1 kg Chicken pieces
• 1 Onion (finely chopped)
• 2 Tomatoes (or 1 can Tomato & Onion Mix)
• 2 tsp Garlic & Ginger paste
• 1 Spices 4 Africa Curry Pack Mild
• 1 Can Coconut Milk (for a creamy curry) OR 1 -2 cups water
• Fresh coriander for garnish
• Salt to taste
Optional: Add 2 Tablespoons apricot jam if you want a sweeter taste
How to Cook
1. Cook the onion
Heat oil in a pot and fry the chopped onion until golden brown.
2. Add the spices
Add the whole spices from the curry pack and cook briefly until fragrant.
3. Build the flavour
Add the powdered spices together with the garlic & ginger paste.
4. Add the tomatoes
Add the tomatoes and cook until soft.
5. Add the chicken
Add chicken pieces and mix well with the spice mixture.
6. Simmer
Add 1–2 cups of water or 1 can Coconut milk and allow the curry to cook slowly.
7. Cook until tender
Let the curry simmer until the chicken is tender and the sauce thickens.
8. Garnish and serve
Top with fresh coriander and serve hot.

Pressure Cooker – ±90 minutes
Stove / Fire – Cook until chicken is tender
